  It goes without saying that this is best made with fresh, just-off-the-vine tomatoes!

  

Ingredients

4 servings

  1 1/2 to 2 pounds flavorful tomatoes, diced

  1/4 cup minced fresh herbs (basil, dill, or parsley, or any two herbs of your choice)

  1 tablespoon extra-virgin olive oil

  1 tablespoon fresh lemon juice

  

Step 1

Combine all of the ingredients in a serving container. Toss gently and serve.
