Mint-Pineapple Rum Cooler Recipe-June 2024

Ingredients

<p>Makes 1 Serving.</p>

  3 tablespoons dark rum

  1/2 cup unsweetened pineapple juice

  2 tablespoons minted simple syrup

  

For minted simple syrup:

1 1/2 cups packed fresh mint leaves

  1 cup sugar

  1 cup water

  Garnish: pineapple slices and fresh mint sprigs

  

Step 1

In a tall glass filled with ice stir together rum, juice, and syrup until combined well.

  

Step 2

Garnish drink with pineapple and mint.

  

To make simple syrup:

Step 3

Chop mint. In a saucepan bring sugar, water and mint to a boil, stirring until sugar is dissolved. Simmer syrup, undisturbed, 2 minutes. Pour syrup through a fine sieve, pressing hard on solids, and cool. Syrup keeps, covered and chilled, 2 weeks. Makes about 1 1/2 cups.
