If the wine gets too cold, some flavor may have been lost. But you may still find it very drinkable. If not, use it for cooking.

Keep in mind that serving red wine at room temperature really means serving it at cellar temperature—not 70°F, but more like 55°F.

　　

Sour

Step 3

You can’t unsour wine, so let it keep on souring, and eventually you’ll have some lovely wine vinegar.
