Watermelon Chia Smoothie

  In the summer when I load up my timeworn farmers’ market cart, it’s not unusual for at least ten pounds of my booty to be watermelon. We eat them at a dizzying pace in our house, but our eyes are often bigger than our bellies and we end up with leftovers. Sometimes I turn the remainder into watermelon juice. Other times I puree it, pour it into ice pop molds, and store it in the freezer. But the most memorable recipe I make with it is this smoothie. Watermelon contains natural sugars and plenty of liquid, which make this smoothie light and refreshing. The fresh mint gives it that je ne sais quoi that you might not be able to pinpoint right away, but which makes the flavor a total standout. 

  

Ingredients

Serves 1

  1 cup (150 g) watermelon chunks, seeds removed

  1⁄4 cup (37 g) frozen strawberries

  1⁄4 cup (33 g) frozen cauliflower florets

  2 fresh mint leaves

  1 tablespoon chia seeds

  1⁄2 cup (120 ml) coconut water, herbal iced tea, or milk of choice

  Combine all the ingredients in a blender and blend until smooth.

  Optional Super Boosts:

  Bee pollen, hemp seeds, flax seeds, maca powder, vanilla or plain protein powder, collagen peptides, probiotic powder, goji berries, pink Himalayan salt.
