Old turnips will taste younger and better if you blanch them before cooking. To blanch a turnip, plunge it into a pot of boiling water large enough so that the boiling doesn’t stop. Leave it in for 5 minutes and then proceed as you will. You can blanch your turnips in advance, dipping them in cold water after the 5 minutes to stop the cooking, and use them much later if you wish.
