Turkey Sausage Patties Recipe-June 2024

  These flavorful patties are a leaner version of the breakfast staple. Serve them with Pancakes (page 290) or Blueberry Muffins (page 285).

  

Ingredients

Serves 4; 1 patty per serving

  Cooking spray

  

Patties

12 ounces ground skinless turkey breast

  1 large egg white

  2 tablespoons water

  1/4 teaspoon pepper

  1/4 teaspoon dried basil, crumbled

  1/4 teaspoon dried sage

  1/4 teaspoon dried oregano, crumbled

  1/8 teaspoon ground allspice

  1/8 teaspoon ground nutmeg

  1/8 teaspoon dried dillweed, crumbled

  1/8 teaspoon garlic powder

  1/8 teaspoon Chili Powder (page 277) or no-salt-added chili powder (optional)

  1/8 teaspoon red hot-pepper sauce (optional)

  

Step 1

Preheat the broiler. Lightly spray a broiler pan and rack with cooking spray.

  

Step 2

In a medium bowl, using your hands or a spoon, combine the ingredients for the patties. Shape into 4 patties. Put the patties on the rack in the pan.

  

Step 3

Broil the patties 2 to 4 inches from the heat for 10 minutes. Turn over and broil for 5 to 10 minutes, or until no longer pink in the center.

The berry of the evergreen pimiento tree and native to the West Indies and South America, allspice is so named because it tastes like a combination of cinnamon, nutmeg, and cloves. Use allspice for a piquant flavor in foods from soups, stews, and meats to cakes and fruit dishes.
