These flavorful patties are a leaner version of the breakfast staple. Serve them with Pancakes (page 290) or Blueberry Muffins (page 285).
Ingredients
Serves 4; 1 patty per servingCooking spray
Patties
12 ounces ground skinless turkey breast1 large egg white
2 tablespoons water
1/4 teaspoon pepper
1/4 teaspoon dried basil, crumbled
1/4 teaspoon dried sage
1/4 teaspoon dried oregano, crumbled
1/8 teaspoon ground allspice
1/8 teaspoon ground nutmeg
1/8 teaspoon dried dillweed, crumbled
1/8 teaspoon garlic powder
1/8 teaspoon Chili Powder (page 277) or no-salt-added chili powder (optional)
1/8 teaspoon red hot-pepper sauce (optional)
Step 1
Preheat the broiler. Lightly spray a broiler pan and rack with cooking spray.
Step 2
In a medium bowl, using your hands or a spoon, combine the ingredients for the patties. Shape into 4 patties. Put the patties on the rack in the pan.
Step 3
Broil the patties 2 to 4 inches from the heat for 10 minutes. Turn over and broil for 5 to 10 minutes, or until no longer pink in the center.
