  This recipe is an accompaniment for Cheddar Shortcakes with Corned Beef Hash.

  

Ingredients

Makes about 3 cups

  1 lb fresh tomatillos, husked, rinsed, and chopped

  1 fresh serrano chile, seeded (for less spiciness) and finely chopped

  1/2 cup finely chopped white onion

  1 garlic clove, minced

  1/2 cup finely chopped fresh cilantro

  1 1/2 tablespoons fresh lime juice

  1 teaspoon salt

  Stir together all ingredients and let stand, covered, about 1 hour.

  Cooks'note:

  •Salsa can be made 1 day ahead and chilled, covered.
