Ingredients
serves 12 tablespoons olive oil
2 slices stone-ground whole-wheat bread
Pour the oil into a medium nonstick skillet over medium heat. Add the bread to the skillet, quickly turning to coat the slices on both sides with the oil. Cook until the toast is well browned, about 1 minute per side, taking care not to let it burn.
Cooks' Note
Enjoy it with coffee, tea, or low-fat milk. For a little extra flavor, add two strips of any citrus peel to the pan (lemon, orange, or lime) while you are heating the oil.
