Tarragon Chicken Salad—Let’s Eat Some Poultry! Recipe-February 2024

Ingredients

serves 2

  1 1/3 cups coarsely chopped cooked chicken breast

  1/2 cup chopped celery

  3 tablespoons mayonnaise

  1 clove garlic, peeled

  1/4 teaspoon onion powder

  1/4 teaspoon dried tarragon

  Combine the chicken, celery, and mayonnaise in a medium bowl. Mix well to coat. Press in the garlic, then mix in the onion powder and tarragon.

  Cooks' Note

  Simple and satisfying, a perfect summertime treat. Serve it at room temperature or chilled, by itself, on a bed of lettuce, or in a stone-ground pita.
