  Use seasonal fruit so you can serve this salad with its mildly sweet and tart dressing year-round.

  

Ingredients

Serves 4; 2 cups salad per serving

  7 ounces mixed spring greens (about 6 cups packed)

  1 1/2 cups quartered hulled strawberries or sliced apples

  1/4 cup thinly sliced red onion

  

Dressing

1/3 cup sweetened cranberry juice

  2 tablespoons honey

  1 1/2 tablespoons balsamic vinegar

  1 teaspoon grated orange zest

  1/2 teaspoon ground cumin

  1/2 teaspoon ground cinnamon

  1/4 cup soft goat cheese, crumbled

  

Step 1

In a shallow serving dish, arrange the salad greens, strawberries, and onion.

  

Step 2

In a small bowl, whisk together the dressing ingredients. Pour over the salad.

Sprinkle the goat cheese on the salad. Serve immediately for the best texture.
