Ingredients
serves 62 pounds sweet potatoes
Salt
6 tablespoons butter
Pepper
1/2 teaspoon ginger
1 teaspoon cinnamon
2 tablespoons black or golden raisins, soaked in water for 15 minutes
Peel the sweet potatoes and cut them into pieces. Boil in salted water for about 15–20 minutes, until soft. Drain and mash with a fork. Add butter, salt and pepper, ginger, and cinnamon, and beat well. Then add the drained raisins.
