Ingredients
Makes 56 hors d'oeuvres1 (12-inch) seedless cucumber (usually plastic-wrapped)
4 ounces cream cheese, softened (1/2 cup)
1/4 cup finely chopped fresh chives
2 tablespoons drained bottled horseradish
1/4 teaspoon salt
1 pound thinly sliced smoked salmon
Step 1
Quarter cucumber lengthwise, cutting off and discarding rounded ends. Stir together cream cheese, chives, horseradish, salt, and pepper to taste until combined well.
