Skirt steak is an incredibly flavorful cut of meat that cooks in minutes. And since this recipe calls for just 3/4 cup wine, you'll have plenty left over to serve with dinner.
Ingredients
Makes 4 servings1 1/2 lb skirt steak, cut into 4 pieces
3/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon vegetable oil
3/4 cup dry red wine
4 fresh thyme sprigs
1 Turkish or 1/2 California bay leaf
1 teaspoon sugar
1/2 teaspoon Worcestershire sauce
2 tablespoons cold unsalted butter, cut into small pieces
Step 1
Pat steak dry and sprinkle all over with salt and pepper. Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook steaks, turning over once, 5 to 7 minutes total for medium-rare. Transfer to a platter.
