Ingredients
serves 4 to 61/2 cup canola oil
1 medium white onion, sliced and separated into rings
One 9-ounce package frozen cut green beans, thawed, or one 14 1/2-ounce can cut green beans, rinsed and drained
One 10 3/4-ounce can cream of mushroom soup
Preheat the oven to 350 degrees. Preheat a medium saucepan over high heat. Add the oil and heat until barely smoking, about 3 minutes. In batches, add onions and flash fry until browned, about 30 seconds. Remove the onions and drain on paper towels. Combine the green beans and soup in a 1-quart ovenproof casserole dish. Scatter the onions over the mixture and bake until golden brown on top, about 25 minutes.
Cooks' Note
So as not to spatter the very hot oil in which the onions are fried, use a pan with high, straight sides, such as a saucepan; don’t crowd the pan, and retrieve the onions with a slotted spoon.
