
I use a lot of sherry in low-alcohol drinks. And yes, I do have two recipes for alternatives to the classic rum-filled piña colada. (Here's the nonalcoholic version.) Sherry coladas have a special magic, including some of the fruity, nutty elements of rum while keeping the alcohol proof low. This 5% ABV drink is incredibly tasty and still has wonderful complex flavors that keep it from being candy. Isn’t that the goal for no- and low-alcohol cocktails?
To make the salt tincture, simply combine four parts water to one part salt in a resealable jar and shake until the salt dissolves. Transfer the tincture to a dasher or eye dropper bottle to use.
Ingredients
Makes 1 cocktail2 oz. oloroso sherry
1½ oz. fresh pineapple juice
1½ oz. cream of coconut, such as Coco Lopez
½ oz. fresh lime juice
6 drops salt tincture (see note at top)
Pineapple slice, cherry, and frond for garnish
Step 1
Combine sherry, pineapple juice, cream of coconut, lime, and salt tincture in a blender with ½ cup of ice and blend until smooth.
Step 2
