Ingredients
Enough to make 6 individual pizzas1 1/2 cups warm water (110°–115°F)
1 1/2 tablespoons sugar
3 teaspoons active dry yeast (about 1 1/2 envelopes)
4 1/2 cups all-purpose flour
4 1/2 tablespoons olive oil
2 1/4 teaspoons salt
Cornmeal, for dusting
Nonstick vegetable-oil spray
Step 1
Brush a large bowl with oil. Mix the warm water and sugar in a food processor. Sprinkle the yeast over; stir to dissolve. Let stand until the mixture bubbles, about 10 minutes. Add the flour, oil, and salt. Process 1 minute.
Step 2
Transfer the dough to a floured surface; knead until smooth, about 5 minutes. Place in prepared bowl, turning to coat dough with oil. Cover the bowl with plastic wrap and let rise in a warm draft-free area until doubled in volume, about 1 hour.
Step 3
Sprinkle cornmeal over rimmed baking sheet. Divide the dough into 6 equal portions; roll each into a ball. Lightly spray a large sheet of plastic wrap with nonstick spray; place over the dough balls, sprayed side down. Refrigerate 1 hour before rolling and baking.The Epicurious Cookbook
