
Ingredients
Serves 12 slices pineapple, coarsely chopped
1 teaspoon superfine sugar
1 1/2 ounces brandy
Dash raspberry syrup
1/2 cup crushed ice
Club soda
Twist lemon peel
Pineapple stick
Muddle the pineapple and sugar thoroughly in a cocktail shaker. Add the brandy, raspberry syrup and ice. Shake vigorously. Strain into a highball glass, fill up with soda, and decorate with lemon peel and pineapple stick.
