Pear Crisp Recipe-February 2024

  Keep a big can of pears in the pantry, and you can enjoy this simple, spicy crisp any time.

  

Ingredients

serves 6, 1/2 cup per serving

  1/4 cup chopped pecans (about 1 ounce)

  1 29-ounce can pears, sliced, or sliced peaches in fruit juice

  1/4 cup dry white wine (regular or nonalcoholic) and 1/2 cup juice from the pears or peaches, or 3/4 cup juice from the pears or peaches

  2 tablespoons sugar

  1/4 teaspoon ground ginger

  1/4 teaspoon ground cloves or ground cinnamon

  1/2 cup uncooked rolled oats

  1/2 cup firmly packed light brown sugar

  2 tablespoons whole-wheat pastry flour or all-purpose flour

  1/4 teaspoon ground nutmeg

  2 teaspoons canola or corn oil

  

Step 1

Preheat the oven to 350°F.

  

Step 2

In a small ovenproof skillet, dry-roast the pecans in a single layer in the preheating oven for about 10 minutes, or until golden brown, stirring several times. Remove from the skillet so they don’t burn.

  

Step 3

Put the pears in a 1-quart casserole dish or 9-inch glass pie pan.

  

Step 4

In a medium saucepan, stir together the wine and juice, sugar, ginger, and cloves. Bring to a boil over medium-high heat. Cook for 4 minutes, or until reduced by half, stirring occasionally.

  

Step 5

In a small bowl, stir together the oats, brown sugar, flour, and nutmeg. Using a fork, stir in the oil, then the pecans. Sprinkle over the pears. Pour the sauce over all.

  

Step 6

Bake for 20 minutes, or until the top is lightly browned and the sauce is bubbly. Let cool for 20 minutes before serving.

  

Apple Crisp

Replace the pears with canned apple slices, and replace the ginger with 1/8 teaspoon ground nutmeg. Use 1/4 teaspoon ground cinnamon, not ground cloves.
