Ingredients
14-181/2 cup vegetable oil
1/2 cup bourbon
One 0.7-ounce package Italian salad dressing mix
2-3-pound eye-of-round beefsteak
Salt
Coarsely ground black pepper
Step 1
In a shallow glass dish, combine the oil, bourbon, and salad dressing mix. Add the beef and turn to coat it with the marinade. Cover and refrigerate overnight.
Step 2
Preheat the oven to 325 degrees. Remove the meat from the marinade and blot it dry with a paper towel. Salt the meat, then coat it heavily with pepper. Roast uncovered until a meat thermometer registers your preferred doneness.
