Oyster Ramakis—A Seafood Version of Ramakis, Usually Made with Livers. Recipe-February 2024

Ingredients

makes 24 individual appetizers

  12 slices bacon, halved

  24 fresh oysters, shucked

  2 tablespoons chopped fresh parsley

  1/2 teaspoon salt

  Cayenne pepper to taste

  Ground black pepper to taste

  Preheat the broiler. Lay one oyster on each strip of bacon. Top each with 1/4 teaspoon parsley, and sprinkle with salt, cayenne pepper, and black pepper. Roll the bacon strips up around the oysters. Place the ramakis on a broiler tray, position about 4 inches from the heat source, and broil until well browned, 7 to 8 minutes. Turn carefully and broil until the bacon is very crisp, 3 to 4 minutes.

  Cooks' Note

  The ramakis could also serve 4 as a light entrée. As hors d’oeuvres, stick a toothpick into each to make them easier to eat.
