  I’m not one to eat pears out of hand, but I like them—slightly underripe—in salads. Contrasted with the pleasant bite of goat cheese and the sweetness of dried cranberries, this salad is a party for the palate.

  

Ingredients

4 servings

  4 to 6 ounces mixed baby greens (mesclun), or more as desired

  2 firm pears (preferably Bosc), cored and diced

  1/4 cup dried cranberries

  4 ounces crumbled goat cheese

  Natural low-fat balsamic vinaigrette or raspberry vinaigrette dressing to taste

  

Step 1

Combine the ingredients in a serving bowl, toss well, and serve.
