Mixed Fruit Salad with Raspberry Vinaigrette Recipe-February 2024

  Experiment with different varieties of apple and with seasonal fruit when you make this refreshing salad.

  

Ingredients

serves 8, 1/2 cup per serving

  1 large Fuji or Granny Smith apple, thinly sliced

  8 ounces strawberries, stemmed and thinly sliced

  3 small plums, thinly sliced

  2 tablespoons dried sweetened cherries or other dried fruit

  1 1/2 to 2 tablespoons fat-free or light raspberry vinaigrette

  

Step 1

In a medium bowl, toss together all the ingredients.

In addition to varying the dried fruit, you can make flavor changes by substituting fruit nectar, such as apricot, or fat-free mango salad dressing for the raspberry vinaigrette.
