Definition: Victoria Rhubarb jam or preserves is a delicious spread made from the stalks of the Victoria Rhubarb plant. It is a popular way to preserve the tart and tangy flavor of rhubarb and enjoy it throughout the year.
Ingredients:
- 4 cups of Victoria Rhubarb, chopped
- 4 cups of granulated sugar
- 1 lemon, juiced
- 1 teaspoon of lemon zest
- 1/2 teaspoon of vanilla extract
Instructions:
Wash and chop the Victoria Rhubarb stalks into small pieces. In a large pot, combine the chopped rhubarb, sugar, lemon juice, and lemon zest.Let the mixture sit for about 30 minutes to allow the rhubarb to release its juices.Place the pot on the stove over medium heat and bring the mixture to a boil.Reduce the heat to low and let the jam simmer for about 45 minutes, stirring occasionally.Skim off any foam that forms on the surface of the jam. After 45 minutes, check the consistency of the jam by placing a small amount on a chilled plate. If it sets and wrinkles when pushed with your finger, it is ready.Remove the pot from the heat and stir in the vanilla extract.Pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace.Seal the jars tightly and process them in a boiling water bath for 10 minutes to ensure proper preservation.Remove the jars from the water bath and let them cool completely before storing them in a cool, dark place.See also What are the considerations for managing pasture during drought conditions?
