Victoria Rhubarb Jam or Preserves

Definition: Victoria Rhubarb jam or preserves is a delicious spread made from the stalks of the Victoria Rhubarb plant. It is a popular way to preserve the tart and tangy flavor of rhubarb and enjoy it throughout the year.

Ingredients:

  • 4 cups of Victoria Rhubarb, chopped
  • 4 cups of granulated sugar
  • 1 lemon, juiced
  • 1 teaspoon of lemon zest
  • 1/2 teaspoon of vanilla extract

Instructions:

  • Wash and chop the Victoria Rhubarb stalks into small pieces.
  • In a large pot, combine the chopped rhubarb, sugar, lemon juice, and lemon zest.
  • Let the mixture sit for about 30 minutes to allow the rhubarb to release its juices.
  • Place the pot on the stove over medium heat and bring the mixture to a boil.
  • Reduce the heat to low and let the jam simmer for about 45 minutes, stirring occasionally.
  • Skim off any foam that forms on the surface of the jam.
  • After 45 minutes, check the consistency of the jam by placing a small amount on a chilled plate. If it sets and wrinkles when pushed with your finger, it is ready.
  • Remove the pot from the heat and stir in the vanilla extract.
  • Pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace.
  • Seal the jars tightly and process them in a boiling water bath for 10 minutes to ensure proper preservation.
  • Remove the jars from the water bath and let them cool completely before storing them in a cool, dark place.
