Definition: Round kumquat chutney is a flavorful condiment made from round kumquats, a small citrus fruit. It is prepared by combining the kumquats with various spices, sweeteners, and other ingredients to create a tangy and slightly sweet relish that pairs well with a variety of dishes.

Ingredients:

  • 1 pound round kumquats
  • 1 cup sugar
  • 1 cup water
  • 1 teaspoon ginger, grated
  • 1 teaspoon garlic, minced
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili flakes
  • 1 cinnamon stick
  • 1 tablespoon vegetable oil
  • Salt to taste

Instructions:

  • Wash the round kumquats thoroughly and cut them into thin slices, removing any seeds.
  • In a large saucepan, heat the vegetable oil over medium heat.
  • Add the mustard seeds and cumin seeds to the hot oil and let them splutter.
  • Add the grated ginger, minced garlic, and red chili flakes to the saucepan. Sauté for a minute until fragrant.
  • Add the sliced kumquats, sugar, water, turmeric powder, and cinnamon stick to the saucepan. Stir well to combine.
  • Bring the mixture to a boil, then reduce the heat to low and simmer for about 30-40 minutes, or until the chutney thickens and the kumquats become soft.
  • Remove the cinnamon stick from the chutney and let it cool completely.
  • Transfer the chutney to sterilized jars and store in the refrigerator.
