Agricultural Term: Ponderosa Lemon Marmalade
Definition: Ponderosa lemon marmalade is a type of citrus preserve made from the fruit of the Ponderosa lemon tree (Citrus × pyriformis). It is a thick, sweet spread with a tangy flavor, commonly enjoyed on toast, scones, or as a filling for pastries.
Ingredients:
- 4 Ponderosa lemons
- 4 cups granulated sugar
- 4 cups water
Instructions:
Wash the Ponderosa lemons thoroughly under running water to remove any dirt or residue.Using a sharp knife, carefully slice the lemons into thin rounds, removing any seeds as you go.In a large pot, combine the sliced lemons, sugar, and water. Stir well to dissolve the sugar.Place the pot over medium heat and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 1 hour, stirring occasionally. As the mixture simmers, the lemons will soften and release their natural pectin, which helps the marmalade thicken. After 1 hour, increase the heat to medium-high and cook the marmalade for an additional 15-20 minutes, or until it reaches the desired consistency. Stir frequently to prevent sticking or burning. To test the consistency, place a small amount of the marmalade on a chilled plate. If it wrinkles when pushed with your finger, it is ready.Once the marmalade has reached the desired consistency, remove the pot from the heat and let it cool for a few minutes.Transfer the marmalade into sterilized jars, leaving about 1/4 inch of headspace at the top. Seal the jars tightly.Allow the marmalade to cool completely before storing it in a cool, dark place.See also What are the medicinal properties of sweet gum resin?
