Pickled Purple Carrots

Definition: Pickled purple carrots are a type of preserved vegetable made by fermenting purple carrots in a brine solution. The process of pickling enhances the flavor and extends the shelf life of the carrots.

Ingredients:

  • 2 pounds of purple carrots
  • 2 cups of water
  • 1 cup of white vinegar
  • 1/4 cup of granulated sugar
  • 2 tablespoons of kosher salt
  • 2 cloves of garlic, minced
  • 1 teaspoon of whole black peppercorns
  • 1 teaspoon of mustard seeds
  • 1 teaspoon of dill seeds

Instructions:

  • Wash the purple carrots thoroughly under cold running water to remove any dirt or debris. Trim off the tops and ends of the carrots.
  • Slice the carrots into thin rounds or julienne them into matchstick-like strips, depending on your preference.
  • In a large saucepan, combine water, white vinegar, granulated sugar, kosher salt, minced garlic, black peppercorns, mustard seeds, and dill seeds. Bring the mixture to a boil over medium heat, stirring occasionally until the sugar and salt dissolve completely.
  • Remove the saucepan from heat and let the brine cool to room temperature.
  • Place the sliced or julienned purple carrots into clean, sterilized glass jars, leaving about 1 inch of headspace at the top.
  • Pour the cooled brine over the carrots, making sure they are completely submerged. Use a clean spoon or spatula to remove any air bubbles.
  • Seal the jars tightly with lids and store them in a cool, dark place for at least 1 week to allow the carrots to ferment and develop their flavors. The longer you let them ferment, the tangier they will become.
  • After the desired fermentation period, transfer the jars to the refrigerator for long-term storage. Pickled purple carrots can be enjoyed for several months.
