Pickled Purple Carrots
Definition: Pickled purple carrots are a type of preserved vegetable made by fermenting purple carrots in a brine solution. The process of pickling enhances the flavor and extends the shelf life of the carrots.
Ingredients:
- 2 pounds of purple carrots
- 2 cups of water
- 1 cup of white vinegar
- 1/4 cup of granulated sugar

Instructions:
Wash the purple carrots thoroughly under cold running water to remove any dirt or debris. Trim off the tops and ends of the carrots.Slice the carrots into thin rounds or julienne them into matchstick-like strips, depending on your preference.In a large saucepan, combine water, white vinegar, granulated sugar, kosher salt, minced garlic, black peppercorns, mustard seeds, and dill seeds. Bring the mixture to a boil over medium heat, stirring occasionally until the sugar and salt dissolve completely.Remove the saucepan from heat and let the brine cool to room temperature.Place the sliced or julienned purple carrots into clean, sterilized glass jars, leaving about 1 inch of headspace at the top.Pour the cooled brine over the carrots, making sure they are completely submerged. Use a clean spoon or spatula to remove any air bubbles.Seal the jars tightly with lids and store them in a cool, dark place for at least 1 week to allow the carrots to ferment and develop their flavors. The longer you let them ferment, the tangier they will become.After the desired fermentation period, transfer the jars to the refrigerator for long-term storage.
