Pickled Daikon: A Traditional Preservation Method
Pickled daikon, also known as takuan or danmuji, is a popular traditional Japanese and Korean dish made by preserving daikon radishes in a brine solution. Instructions:

Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves completely. Remove from heat and let the mixture cool.After 30 minutes, remove the daikon radishes from the brine solution and rinse them under cold water to remove any excess salt.Place the rinsed daikon radishes in a clean, sterilized glass jar or container.Pour the cooled vinegar mixture over the daikon radishes, ensuring they are fully submerged. If needed, use a weight or a clean, food-safe object to keep the radishes submerged.Seal the jar or container tightly and store it in a cool, dark place for at least 3 days to allow the flavors to develop. For best results, let it ferment for about 1-2 weeks.Once the pickled daikon has reached your desired level of tanginess, transfer it to the refrigerator for long-term storage.
