Agricultural Term: Oval Kumquat

Definition: Oval Kumquat is a citrus fruit that belongs to the Rutaceae family and is scientifically known as Fortunella margarita. It is a small, oval-shaped fruit with a bright orange color and a thin, edible skin. The flesh of the Oval Kumquat is juicy and tart, with a sweet and sour flavor.

Marmalade Making Process:

Step 1: Harvesting the Oval Kumquats

Before making Oval Kumquat marmalade, it is essential to harvest ripe and healthy fruits. The best time to harvest Oval Kumquats is when they have reached their full size and have a vibrant orange color. Gently twist the fruits off the tree, ensuring that the stem remains intact.

Step 2: Washing and Preparing the Kumquats

Thoroughly wash the harvested Oval Kumquats under running water to remove any dirt or debris. Once clean, pat them dry with a towel. Cut off the stem end of each fruit and slice them into thin, even rounds. Remove any seeds that may be present.

Step 3: Cooking the Kumquats

Place the sliced Oval Kumquats in a large pot and add enough water to cover them. Bring the mixture to a boil over medium heat and let it simmer for about 15 minutes. This process helps soften the fruit and extract its natural pectin.

Step 4: Adding Sugar and Flavorings

After simmering, drain the water from the pot and return the cooked Oval Kumquats. Add an equal amount of sugar to the pot, depending on your desired sweetness. Additionally, you can enhance the flavor by adding a splash of lemon juice or a few drops of vanilla extract.

Step 5: Cooking the Marmalade

Place the pot back on the stove over low heat and stir the mixture until the sugar has completely dissolved. Increase the heat to medium and let the marmalade come to a gentle boil. Stir occasionally to prevent sticking and burning. Cook for approximately 30-40 minutes or until the marmalade reaches the desired consistency.

Step 6: Sterilizing and Storing

While the marmalade is cooking, sterilize glass jars and their lids by boiling them in water for a few minutes. Once the marmalade is ready, carefully pour it into the sterilized jars, leaving a small headspace at the top. Seal the jars tightly and let them cool completely before storing them in a cool, dark place.
