Otaheite Gooseberry Pickles

Ingredients:

  • Otaheite Gooseberries – 1 pound

  • Black peppercorns – 1 teaspoon
  • Red chili flakes – 1 teaspoon
  • Garlic cloves – 3, minced

Instructions:

  • Wash the Otaheite Gooseberries thoroughly and remove any stems or blemishes.
  • In a saucepan, combine vinegar, sugar, water, mustard seeds, black peppercorns, red chili flakes, minced garlic, and salt. Bring the mixture to a boil over medium heat, stirring occasionally.
  • Add the Otaheite Gooseberries to the saucepan and simmer for about 5 minutes, or until the gooseberries become slightly tender.
  • Remove the saucepan from heat and let the mixture cool to room temperature.
  • Transfer the pickles along with the liquid into a sterilized jar, ensuring that the gooseberries are fully submerged.
  • Seal the jar tightly and store it in a cool, dark place for at least 2 weeks to allow the flavors to develop.
  • After 2 weeks, the Otaheite Gooseberry pickles will be ready to enjoy. They can be stored in the refrigerator for up to 6 months.
