  • In a separate bowl, mix the pectin with a small amount of sugar. This will help prevent clumping when adding it to the boiling mixture.
  • Gradually add the pectin mixture to the boiling Kabosu fruit mixture, stirring continuously.
  • Continue boiling the mixture for about 10-15 minutes, or until it thickens to your desired consistency. Keep in mind that the mixture will thicken further as it cools.
  • Once the desired consistency is reached, remove the saucepan from heat and let it cool for a few minutes.
  • Pour the hot Kabosu fruit preserves or jams into sterilized jars, leaving a small headspace at the top.
