Instructions
Prepare the canning jars and lids by sterilizing them in boiling water. Set aside to cool.In a large pot, combine the chopped jalapeno peppers, sugar, vinegar, and butter. Stir well to combine.Place the pot over medium-high heat and bring the mixture to a rolling boil, stirring constantly.Add the liquid pectin and continue to boil for an additional 1-2 minutes, or until the mixture thickens slightly.If desired, add a few drops of green food coloring to enhance the visual appeal of the jelly.Remove the pot from heat and skim off any foam that may have formed on the surface.Ladle the hot jelly into the sterilized jars, leaving about 1/4 inch of headspace at the top.Wipe the rims of the jars with a clean, damp cloth to remove any spills or residue.Place the lids on the jars and screw on the bands until they are fingertip tight.Process the jars in a boiling water bath for 10 minutes to ensure proper sealing.Remove the jars from the water bath and let them cool completely on a towel or wire rack.Once cooled, check the seals by pressing down on the center of each lid.
