Ingredients:

  • 500 grams Indian Gooseberries
  • 1 cup mustard oil
  • 2 tablespoons mustard seeds
  • 2 tablespoons fenugreek seeds
  • 2 tablespoons fennel seeds
  • 1 tablespoon turmeric powder
  • 1 tablespoon red chili powder
  • 1 tablespoon salt
  • 1 tablespoon jaggery (optional)

Instructions:

  • Wash the Indian Gooseberries thoroughly and pat them dry.
  • Make small cuts on each gooseberry to allow the spices to penetrate.
  • Heat mustard oil in a pan and add mustard seeds, fenugreek seeds, and fennel seeds. Sauté until the seeds crackle.
  • Add turmeric powder and red chili powder to the pan and mix well.
  • Add the Indian Gooseberries to the pan and stir-fry for a few minutes.
  • Reduce the heat and cover the pan. Let the gooseberries cook until they become soft.
  • Add salt and jaggery (if desired) to the pan and mix well.
  • Cook for a few more minutes until the flavors are well combined.
  • Remove from heat and let the pickle cool down.
  • Transfer the pickle to a clean, sterilized jar and store in a cool, dry place.
