How to Make Elderberry Wine

Elderberry wine is a delightful and flavorful beverage that can be made at home using fresh elderberries. This rich and dark wine is known for its deep purple color and robust taste. Here is a step-by-step guide on how to make elderberry wine:

Ingredients:

  • 5 pounds of fresh elderberries
  • 10 cups of water
  • 3 pounds of sugar
  • 2 teaspoons of wine yeast
  • 1 teaspoon of yeast nutrient
  • 1 teaspoon of acid blend
  • 1 campden tablet (optional)

Equipment:

  • Fermenting vessel
  • Airlock
  • Siphon tube
  • Hydrometer
  • Large pot
  • Fine mesh strainer
  • Glass bottles with corks

Instructions:

Step 1: Harvesting and Preparing the Elderberries

Start by harvesting 5 pounds of fresh elderberries. Ensure that the berries are ripe and free from any mold or damage. Remove the stems and wash the berries thoroughly.

Step 2: Extracting the Juice

In a large pot, add the elderberries and 10 cups of water. Bring the mixture to a boil and then simmer for about 30 minutes. Mash the berries with a spoon to release their juices. Allow the mixture to cool.

Step 3: Straining the Juice

Using a fine mesh strainer, strain the elderberry mixture into a fermenting vessel. Press the berries gently to extract all the juice. Discard the solids.

Step 4: Adding the Ingredients

Add 3 pounds of sugar, 2 teaspoons of wine yeast, 1 teaspoon of yeast nutrient, and 1 teaspoon of acid blend to the elderberry juice. Stir well to dissolve the sugar and mix the ingredients thoroughly.

Step 5: Fermentation

If desired, crush and dissolve a campden tablet in a small amount of water and add it to the mixture to prevent any unwanted bacteria or wild yeast growth. Attach an airlock to the fermenting vessel and let the mixture ferment for about 7-10 days at room temperature.

Step 6: Racking

After the initial fermentation, siphon the wine into a clean vessel, leaving behind any sediment at the bottom. This process is called racking and helps clarify the wine.

Step 7: Aging and Bottling

Allow the wine to age for at least 6 months to develop its flavors. During this time, you can rack the wine periodically to further clarify it. Once the wine has aged, carefully siphon it into glass bottles and cork them tightly.
