Ingredients:

  • 2 pounds of ripe Cornelian cherries
  • 2 cups of granulated sugar

Instructions:

  • Wash the Cornelian cherries thoroughly under running water and remove any stems or leaves.
  • Place the cherries in a large pot and add enough water to cover them.
  • Bring the pot to a boil over medium heat and let the cherries simmer for about 15 minutes or until they become soft.
  • Once the cherries are soft, remove the pot from heat and let it cool slightly.
  • Using a potato masher or a fork, mash the cherries to release their juices and break them down into smaller pieces.
  • Return the pot to the stove and add the sugar, lemon juice, and lemon zest. Stir well to combine.
  • Bring the mixture to a boil over medium-high heat, stirring constantly to prevent sticking or burning.

  • During the last few minutes of cooking, add the vanilla extract and stir well.
  • Once the jam has thickened and coats the back of a spoon, remove the pot from heat.
  • Pour the hot jam into sterilized jars, leaving about ¼ inch of headspace at the top.
