How to Make Christmas Berry Jam or Jelly
Definition: Christmas Berry jam or jelly refers to a sweet spread made from the berries of the Christmas Berry plant (Schinus molle). It is a popular preserve enjoyed during the holiday season due to its vibrant red color and festive flavor.Ingredients:
- 4 cups of Christmas Berry fruits

Instructions:
- Wash the Christmas Berry fruits thoroughly and remove any stems or leaves.
- Place the berries in a large pot and crush them slightly using a potato masher or the back of a spoon.
- Measure out the required amount of sugar and set it aside.
- Juice the lemon and set the juice aside.
- Place the pot with the crushed berries on the stove over medium heat.
- Bring the berries to a gentle simmer, stirring occasionally to prevent sticking or burning.
- Add the lemon juice to the pot and continue simmering for about 10 minutes.
- Gradually add the sugar to the pot, stirring continuously until it is completely dissolved.
- Once the sugar is dissolved, increase the heat to high and bring the mixture to a rolling boil.
- Stir in the pectin and let the mixture boil vigorously for 1 minute, stirring constantly.
- Remove the pot from heat and skim off any foam that may have formed on the surface.
- While the jam is still hot, carefully ladle it into sterilized jars, leaving about 1/4 inch of headspace.
- Wipe the jar rims clean with a damp cloth to ensure a proper seal.
- Place the lids on the jars and tighten the bands until they are fingertip tight.
- Process the jars in a boiling water bath for 10 minutes to ensure proper preservation.
- Remove the jars from the water bath and let them cool on a towel or wire rack.
- Once cooled, check the seals by pressing down on the center of each lid. If it doesn’t pop back, the jar is properly sealed.
- Label the jars with the date and store them in a cool, dark place for up to one year.
