Definition

Amla pickle is a traditional Indian condiment made from Indian gooseberries, also known as amla. It is a popular preserve that is enjoyed for its tangy and spicy flavor.

Ingredients

  • 500 grams of fresh amla (Indian gooseberries)
  • 2 tablespoons of mustard oil
  • 1 tablespoon of fenugreek seeds
  • 1 tablespoon of fennel seeds
  • 1 tablespoon of nigella seeds
  • 1 tablespoon of turmeric powder
  • 1 tablespoon of red chili powder
  • 1 tablespoon of salt
  • 1 tablespoon of jaggery (optional)

Instructions

  • Wash the amla thoroughly and pat them dry.
  • Heat mustard oil in a pan and add fenugreek seeds, fennel seeds, and nigella seeds. Sauté them until they release their aroma.
  • Add the amla to the pan and cook them on low heat for about 10 minutes, stirring occasionally.
  • Add turmeric powder, red chili powder, and salt to the pan. Mix well to coat the amla evenly.
  • Cook the amla for another 5 minutes, until they become soft and tender.
  • If desired, add jaggery to balance the flavors. Mix well until the jaggery melts.
  • Remove the pan from heat and let the pickle cool down.
  • Transfer the pickle to a clean, sterilized jar and store it in a cool, dry place.
  • Allow the pickle to mature for at least a week before consuming to enhance the flavors.
