Combine leftover ham with frozen hash browns and get an incredibly easy casserole to serve for brunch or dinner.
Ingredients
serves 4, 4 1/2-inch square per servingCooking spray
12 ounces frozen fat-free, no-salt-added shredded hash brown potatoes
4 ounces lower-sodium, low-fat ham, thinly sliced and chopped (about 1 cup)
3/4 cup chopped red bell pepper
1/2 cup chopped onion, thawed if frozen
1/2 cup chopped green onions (green and white parts) (about 9 medium)
1/2 cup fat-free sour cream
1/2 cup fat-free evaporated milk
1 finely chopped medium fresh jalapeño or 1/4 teaspoon cayenne
1/8 teaspoon salt
3 ounces shredded low-fat sharp Cheddar cheese (about 3/4 cup)
Step 1
Preheat the oven to 350°F. Lightly spray a 9-inch square glass baking dish with cooking spray.
Step 2
In a large bowl, stir together all the ingredients except the Cheddar. Spoon into the baking dish.
Step 3
Bake for 50 minutes, or until the potatoes are tender. Stir in half the Cheddar. Sprinkle with the remaining Cheddar. Bake for 5 minutes, or until the Cheddar is melted.

You can save almost 40 minutes by using your microwave when preparing this dish. In a 9-inch square microwaveable baking dish, stir together all the ingredients except the Cheddar. Cook, covered, on 100 percent power (high) for 15 minutes, or until the potatoes are tender, stirring every 5 minutes. Sprinkle with all the Cheddar. Cook, uncovered, on 100 percent power (high) for 1 minute, or until the Cheddar is melted.
