Green Mayonnaise Recipe-March 2024

  In addition to being a great complement to the poached salmon, this mayonnaise is a good pair with shrimp, veal, or poached chicken breasts.

  

Ingredients

Makes about 1 cup

  2 tablespoons chopped fresh chives

  1 1/2 tablespoons chopped fresh tarragon

  3 tablespoons chopped fresh flat-leaf parsley

  1 tablespoon chopped fresh chervil

  2 teaspoons chopped fresh dill

  1 tablespoon fresh lemon juice

  1 cup mayonnaise

  1/4 teaspoon salt

  1/8 teaspoon pepper

  

Step 1

Pulse herbs in a blender with lemon juice and 1/2 cup mayonnaise until puréed. Add remaining 1/2 cup mayonnaise, salt, and pepper and blend well.

  

Step 2

Transfer to a bowl and chill, covered, at least 2 hours to allow flavors to blend.

  Cooks' note:

  • Green mayonnaise can be chilled up to 1 day.
