Green Beans Italiano—Parmesan is Always Good On Beans Recipe-March 2024

Ingredients

serves 5 or 6

  1/3 cup olive oil

  1 medium yellow onion, diced

  1 medium green bell pepper, cored, seeded, and diced

  1 clove garlic, peeled

  Two 9-ounce packages frozen cut green beans, thawed, or two 14 1/2-ounce cans cut green beans, rinsed and drained

  1 teaspoon dried basil

  Salt and ground black pepper to taste

  1/3 cup grated Parmesan cheese

  Preheat the oven to 350 degrees. Preheat a large skillet over high heat. Add the oil, then the onion and bell pepper. Press in the garlic. Stirring occasionally, cook until the onion is lightly browned, about 2 minutes. Stir in the beans and basil. Add salt and pepper to taste. Transfer to a 1-quart ovenproof casserole dish and sprinkle with Parmesan cheese. Bake until the cheese has browned, about 10 minutes.

  Cooks' Note

  In addition to oven baking, you could also cook the casserole in a microwave oven at full power for about 2 1⁄2 minutes. Remember that Parmesan cheese is salty; don’t add too much additional salt.
