Ingredients
Makes 1/2 cup1 1/2 teaspoons finely grated fresh ginger
1 teaspoon tamari soy sauce
2 tablespoons rice wine vinegar
Coarse salt and freshly ground pepper
1/4 cup plus 2 tablespoons sunflower or safflower oil
Thinly sliced scallions (optional)
WHISK TOGETHER ginger, tamari, vinegar, and salt and pepper to taste in a bowl, then gradually whisk in oil, adding it in a slow, steady stream, and continue whisking until mixture is emulsified. Stir in scallions, if desired.
