A plate of fudge passed around the table at the end of a meal is as good a dessert as any. A simple way to form the fudge is to take the box the sugar came in and line it with a plastic bag or use the paper inside the box. Spoon the fudge into the box and let it set—then it is all boxed up and ready to give as a gift!
Ingredients
makes 16 (1-inch) squares8 ounces unsweetened chocolate (I like Green & Black’s), finely chopped
3 tablespoons plus 1 teaspoon unsalted butter, softened
2 (1-pound) boxes confectioners’ sugar
2 large eggs, beaten
6 tablespoons heavy cream
2 teaspoons pure vanilla extract or favorite flavoring
In a bowl set over, but not touching, simmering water, or in a double boiler, combine the chocolate and butter. Stir until melted and smooth. Remove from the heat and add the sugar, egg, cream, and vanilla. Beat the fudge with an electric mixer on medium-low speed until smooth and well blended, about 5 minutes. Spoon the fudge into the prepared box or a buttered loaf pan. Let sit for 1 hour or so to harden. (Or go right ahead and eat some mixed into ice cream!)
