Fragrant Rice and Cashew Pilaf Recipe-February 2024

  The simplicity of this recipe highlights the aroma and flavor of specialty brown rice. If you don’t want to search for one of these more exotic types of rice, longgrain brown rice will do. This tasty side dish can enhance many meals.

  

Ingredients

6 servings

  1 1/2 cups brown basmati, Texmati, jasmine, wehani, or other specialty rice

  2 tablespoons nonhydrogenated margarine or whipped butter

  3 scallions, thinly sliced

  Juice of 1/2 lemon

  1/3 cup toasted chopped cashew pieces

  Salt and freshly ground pepper to taste

  

Step 1

Bring 4 cups water to a simmer in a large saucepan. Stir in the rice, cover, and simmer gently until the water is absorbed, about 35 minutes.

  

Step 2

Stir the remaining ingredients into the rice, and serve.
