For 1 cup of all-purpose flour, you can substitute 1 cup plus 2 tablespoons cake flour. In many baking situations, 1 1/2 cups rolled oats can replace 1 cup all-purpose flour. Consider whirling your oatmeal in the food processor to make the texture finer if you try this.
