Cucumber Yogurt Sauce Recipe-February 2024

Ingredients

makes 8 servings

  1 cup plain yogurt

  2 European-style cucumbers, peeled, seeded, and diced

  1 garlic clove, minced

  1 tablespoon chopped fresh mint

  1 1/2 teaspoons chopped fresh flat-leaf parsley

  1/2 teaspoon kosher salt

  Combine all the ingredients and put in a serving bowl. Cover and refrigerate for at least an hour before serving.
