Ingredients
Makes 4 servings1 1/2 pounds boiling potatoes (3 or 4 medium)
2 teaspoons olive oil
1 teaspoon finely chopped fresh rosemary
1/2 teaspoon salt
1/4 teaspoon black pepper
5 bacon slices (1/4 pound), cut into 1-inch pieces
Step 1
Put oven rack in middle position and preheat oven to 450°F.
Step 2
Peel potatoes and cut into 3/4-inch cubes. Transfer potatoes to a 2 1/2-quart shallow baking dish and toss with oil, rosemary, salt, and pepper. Arrange potatoes in 1 layer and scatter bacon on top.
