Ingredients
Makes about 2 cups1 cup sugar
2 tablespoons water
1/2 cup heavy cream
1 tablespoon dark rum
3/4 cup pecan pieces (2 1/2 ounces), toasted

Cook sugar in a dry 2-quart heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar is melted into a deep golden caramel.
