Ingredients
Makes 4 servings1/2 cup buckwheat flour
1/2 cup all-purpose flour

1 large egg, lightly beaten
1 1/4 cups well-shaken buttermilk
2 1/2 tablespoons vegetable oil
1/4 lb sliced Canadian bacon, cut into 1/8-inch pieces

Stir together flours, sugar, baking powder, baking soda, and salt. Add egg, buttermilk, and 2 tablespoons oil and stir just until blended. Stir in bacon.
