Ingredients

serves 2

  Four 5-ounce loin lamb chops

  1 tablespoon lemon juice

  2 teaspoons apple cider vinegar

  1/2 teaspoon Italian seasoning

  1/4 teaspoon garlic salt

  1/4 teaspoon ground black pepper

Preheat the broiler. Drizzle the chops on both sides with lemon juice and vinegar. In a small bowl, mix together the Italian seasoning, garlic salt, and pepper. Sprinkle the mixture onto both sides of each chop to coat. Place the chops in a broiler pan and broil for about 4 minutes a side for medium doneness.

  Cooks' Note

This recipe tastes great cooked over your outdoor grill. Cooking times vary by altitude. The higher the altitude, the longer it takes to even boil water. So, if you live in the high mountains and you are cooking over a wood or charcoal fire, you need to add a couple of minutes to the cooking time to get your meats to the doneness you desire. In addition to broiling or grilling, you could also cook the chops on the stove top, in a large nonstick skillet for about 5 minutes a side over medium heat.
