Broiled Japanese Eggplant Recipe-February 2024

  An intensely flavored (but not overpowering) accompaniment for Asian-style dishes, this adds an enticing visual accent to the dinner plate as well.

  

Ingredients

6 servings

  2 tablespoons hoisin sauce (see note)

  1 tablespoon dark sesame oil

  1/2 teaspoon grated fresh ginger, or to taste

  1 teaspoon honey or maple syrup

  6 small Japanese eggplants, rinsed, stemmed, and cut in half lengthwise

  

Step 1

Preheat the broiler.

  

Step 2

Combine the first 4 ingredients in a medium mixing bowl and stir together.

  

Step 3

Arrange the eggplants, cut side up, on a foil-lined baking sheet or roasting pan and distribute the marinade over them.

  

Step 4

Broil until the eggplants begin turning dark and are touched by charred spots, 6 to 8 minutes. Serve at once.

  Cooks' Note

  Hoisin is a pungent sauce commonly used in Chinese cookery. You will find it in most supermarkets, shelved near soy sauce and other Asian condiments.
