Parmesan and beans sounds an unlikely coupling but I recommend it. Pecorino, a young one, is a possibility here too, or one of the hard sheep’s cheeses British cheese makers are getting so good at.
Ingredients
green, purple, or yellow green beans or runnersbutter

Step 1
Trim the beans (I suggest a good handful per person), then boil them in deep, salted water or steam over boiling water.
Step 2
Have ready some almost-melted butter and some grated cheese. As you lift the beans from the water, toss them in the butter and cheese.Tender
